Mrs. Knight’s Bran Muffins

The batter is just as good as the muffins!

In large bowl, blend together:

2 cups flour
2 cups bran
1 cup brown sugar
2 tsp. soda
2 tsp. baking powder

In separate bowl, beat together:

2 eggs
4 Tbsp. oil
2 cups buttermilk (or milk and vinegar)

Add the wet to the dry.  You can add:

raisins, dates, apple bits

Bake at 375ºF for 15-20 minutes.
