Almond Bars

We found this recipe in the Western cookbook and immediately liked it because it has a great almond taste without the hassle of rolling crust as for traditional almond patties.

Crust:

1 cup melted butter
2 1/2 cups oatmeal
1 cup brown sugar
2 cups flour
1/2 tsp. soda

Mix crust together and pack 1/2 in a greased 9x13 pan.  Prepare the filling:

3 egg yolks
3/4 cup sugar
2 Tbsp. corn starch
2 cups milk
3 tsp. almond extract
dash of salt

Cook filling until thick and spread over bottom crust.  Top with remaining crust mixture.  Bake 30 minutes at 350ºF.
