Almond Extract

I came across descriptions of this cookie while browsing Dutch baking blogs this past Christmas and have since made them several times. I like the light flaky-ness of them. I mentioned them in a group call the other day and thought I ought to post the recipe to encourage experimenting.

Make a pie crust and roll to fit a jelly roll pan.  Then mix the following and pour it into the crust:

1 cup milk
12 egg yolks (whites to make an angel food cake?)
4 cups sugar
1 cup flour
pinch of salt
10 tsp. almond extract

Put a top crust on, sprinkle with sugar and poke lightly with the point of a knife.  Bake 15 minutes at 400ºF and then 20 minutes at 300ºF.

We found this recipe in the Western cookbook and immediately liked it because it has a great almond taste without the hassle of rolling crust as for traditional almond patties.
