Lemons
We had a delicious dish for supper tonight, and I thought I would send the recipe along in case anyone else wanted to try it.
Spicy Salsa that i ate with deep fried dough, but it would also be really good with a healthier alternative.
We really enjoy this lemon spread for our toast or bread. It is a good way to use some zucchini when there is an abundance. I also peel, slice, and measure the zucchini and freeze it. Then in the winter when lemons are a good price and I have some extra time, I can make a batch.
This is a favourite family entree, one often served to guests as well. There are variations by using orange instead of lemon juice, adding various fresh herbs...
