Spicy Salsa that i ate with deep fried dough, but it would also be really good with a healthier alternative.
1 medium onion, minced in small cubes
2 tablespoons hot pepper (to taste)
1 packet cilantro (not really sure how much this is..sorry)
2 semi ripe tomatoes, cut in small pieces
1/2 cup of olive oil
3 lemons
1 cup boiling water
salt to taste
Soften the onion with recently boiled water, leave for a minute, then strain and squeeze. Then in a bowl, put the onion, minced cilantro, tomato, oil, juice of the 3 lemons, the hot pepper and the salt.
