Soups with this flavour are called "Beppe's Soup" by the Bakker clan. Pake usually makes really small meatballs. The delicious flavour is a combination of the Dutch meatball spice and the Honing brand Spring Vegetable Soup mix. Maggi is also used to flavour it. My version is a little different from Beppe's but it is the same basic taste.
Bring to a boil:
- 10 cups water
Add:
- 3-4 carrots
- 4 celery stalks and leaves
- 1/2 cup chopped leek or onion
- 1 Tbsp. parsley leaves
- small meatballs (see recipe below)
Simmer for -1 hour. Add:
- 1 pkg. Honing Spring Vegetable Soup mix
- 1 pkg. chicken noodle soup mix
- 1 cup very fine egg noodles
Reduce heat and simmer for 1 hour. I usually prepare the soup before church and add the soup mix and noodles before we leave, then I stir the soup and turn the burner off, leaving the pan on the element. When we get home, it only has to be heated.
Meatballs
To make the meatballs for the soup, combine:
- 1/2 lb. lean ground beef
- 1/2 tsp. Dutch meatball spice (or nutmeg)
- 1/4 cup fine bread crumbs
Roll into very small meatballs (marble size), brown in oven and drain excess fat.
