French Onion Soup

Ingredients
6 onions
8 cups beef stock
white wine
by leaf
1/4 tsp dry thyme
1/4 tsp sugar
2 cloves minced garlic
french bread (sliced and toasted)
1.5 cups grated Swiss gruyere cheese

 

  1. Large saucepan: onions in olive oil until well browned. At 10 mins add sugar, cook another 20 minutes.
  2. Add garlic. Saute one minute.
  3. Add stock, wine, bay leaf, thyme. Partially cover and simmer 30 mins.
  4. Season with salt & pepper.
  5. Ladle into bowls, cover with toast, sprinkle with cheese.
  6. Broil for 10 mins at 350 F.
