I thought I'd share a recipe for mushroom lentil burgers that I made this past weekend and really enjoyed.
1 onion (finely chopped)
1 c mushrooms (finely chopped)
1/2 t dried thyme
1 can lentils (drained & rinsed - also works with cooked dried lentils)
1/2 c quick-cooking oats
3 T Parmesan cheese (but any cheese will work)
2 T chopped pine nuts (pecan, walnut, even peanuts will also work)
Saute onion in a little oil until softened. Add mushrooms & thyme & cook until just starting to brown (about 5 mins). Mush all together in a bowl and cool slightly.
Mash the lentils in a bowl, stir in the mushroom/onion mixture & add oats, cheese, nuts & a little salt/pepper.
Shape into patties (about 3/4" thick). This recipe makes 4, but you can easily double (or triple) it.
Lastly, in the skillet heat each side for about 3-4 mins until golden brown. Serve with lots of toppings and enjoy!

Good for quick lunches
Sat, 12/04/2010 - 20:23I've made these a few times and made extra, then frozen them in freezer bags. It makes a nice quick warm lunch to pull one out, microwave it for a minute and a half and put it on toast (or hamburger buns if available) with some condiments. (See photo above).
