Last night we tried out some new recipes on friends. Here is one easy recipe that turned out to be quite delectable:
1 Tbsp olive oil
1 1/2 cups red onions, sliced
2 tsp thyme
1 Tbsp balsamic vinegar
1 pound puff pastry (we bought the frozen dough.... I'm not sure how
to make a good puff pastry from scratch)
1/2 cup goat cheese, broken up
1 egg, beaten
Salt & pepper
Fry the onions in the oil over gentle heat until soft, not browning.
Add the thyme, seasoning, and balsamic vinegar. Cook for 5 more minutes. Remove the pan from the heat.
Cut four 6 inch circles out of the pastry. Place on a dampened baking sheet and score a 3/4 inch border inside the edge of each round.
Divide the onions among the pastries and top with the goat cheese.
Brush the edge of each circle with beaten egg and bake for 25-30 min, or until golden.
