I came across a recipe for a homemade equivalent of Clif Bars. I modified a few of the ingredients to reflect what supplies our cupboards contained with positive results.

1 1/4 C buckwheat, sprouted and dehydrated

1 C oats, chopped coarsely

3 Tbsp flax, ground

1/4 C dried fruit, finely chopped

1/4 C nuts, finely chopped

1/4 C honey/syrup/molasses

2 Tbsp dark brown sugar

1/3 C nut butter (peanut, almond, cashew, etc)

1 tsp vanilla extract
Mix the dry ingredients (buckwheat through nuts) in a bowl (I use our kitchenaid).
Combine the honey/syrup/molasses and brown sugar in a saucepan and bring to a boil, stirred continually. Remove from heat and add the nut butter and vanilla.
Mix the syrup sauce into the dry ingredients and then scrape into a greased 8x8 baking dish. Cover with a piece of waxed paper and press into all corners of the pan until evenly distributed and level. Cool to room temperature. Cut into bars, wrap in plastic wrap and store in the fridge.
