This is a recipe that is not, maybe, for everyone. Our roommate Cindy’s first and only response was “well, it’s not chocolate cake” Now we warn her of that sad fact before she tastes anything we bake.
1 cup whole wheat flour
1 cup all purpose flour
1 cup oat bran
1 cup rolled oats
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 Tbsp. lemon juice
2 cups skim milk
1 Tbsp. honey
Preheat oven to 375ºF. Lightly oil a 5x9 inch loaf pan. Combine dry ingredients in a large bowl. Combine lemon juice and milk in small bowl and let stand 1 minute. Stir in homey and add to dry mixture until moist. Place in prepared pan. Smooth top lightly with large spoon. Bake 35 minutes.
