This was the suggested pairing to the Mushroom Pork Loin in the supermarket sample booth. Both were very good and this one doesn't take a lot of preparation.
1 baguette
8 oz mozzarella cheese
1 bunch of fresh basil
5 cloves of garlic (pressed)
1 Tbsp. balsamic vinegar
2 Tbsp. extra-virgin olive oil
1 1/2 cups diced fresh tomatoes
1 teaspoon seasoned salt
1/4 teaspoon pepper
Slice the baguette into slices 1/2 thick. Cut cheese into small cubes. Slice basil into thin strips.
Mix garlic, vinegar, and olive oil in a medium bowl. Add cheese, tomatoes, salt and pepper and stir together.
Broil bread 6 inches from flame for about 1 minute per side, being careful not to brown it too much. Top with the mixture from the bowl and sprinkle the basil on top before serving.
