One of our favourite muffins. I usually double the recipe and make either 16 extra large or 20 large muffins. I use silicon muffins cupcake forms in metal muffin tins. Easy clean up there!
Measure into a large bowl :
- 2 cups flour
- 1 ½ tsp baking powder
- ½ tsp soda
- 1 tsp salt
- ¼ cup cocoa
- In a separate bowl combine:
- 1 egg, beaten with a whisk
- ¼ cup oil
- ½ cup sugar
- ¾ cup milk ( or almond or coconut milk)
- 1 cup grated zucchini
Ad wet ingredients to dry, stir only until combined.
Add:
- ¾ cup chocolate chips
- ½ cup chopped walnuts, optional
- ½ cup flaked coconut, optional
Bake at 350F for 25 minutes.
Can also make into zucchini spice muffins:
- Omit cocoa
add:
- 1 tsp cinnamon
- ½ tsp allspice or cloves
- raisins, dates etc as you prefer.
