Zucchini
One of our favourite muffins. I usually double the recipe and make either 16 extra large or 20 large muffins. I use silicon muffins cupcake forms in metal muffin tins. Easy clean up there!
I got this recipe from a friend at work after she brought it to a pot-luck lunch. I like it warm or cold.
We really enjoy this lemon spread for our toast or bread. It is a good way to use some zucchini when there is an abundance. I also peel, slice, and measure the zucchini and freeze it. Then in the winter when lemons are a good price and I have some extra time, I can make a batch.
I bought Bisquick to try this one and we like it. When measuring the cheese, I loosely pack it into the measuring cup.
We like this as a side to the boxes of macaroni and cheese. It is also good over rice. Leftovers of rice, ground beef, and vegies added to Campbell’s Tomato Soup is one of Jonathan’s favourite soups.
