Ground Beef and Veggies

We like this as a side to the boxes of macaroni and cheese.  It is also good over rice.  Leftovers of rice, ground beef, and vegies added to Campbell’s Tomato Soup is one of Jonathan’s favourite soups.

Brown and drain off fat:

1 1/2 lb. ground beef

Add the following:

1 tsp. salt
1/2 tsp. pepper
1/2 medium onion
3 ribs celery (chopped)
1/2 medium green pepper
1 cup cabbage or zucchini (chopped)
2 medium carrots (chopped)
1 qt. canned tomatoes
1-2 tsp. chili powder or taco seasoning

Cook until the liquid from the tomatoes is gone.
