I got this recipe from a friend at work after she brought it to a pot-luck lunch. I like it warm or cold.

  • Wrap a whole garlic in tin foil and bake at 350. Also bake a sweet potato, acorn squash and beets. Once they are cooked and soft, dice and add to a roasting pan with the below veggies. Use whatever veggies you like!
  • Toss in olive oil and dry herbs (like Italian seasoning) a mix of veggies (zucchini, peppers, asparagus), then roast at 400.
  • Make I cup (dry) couscous. Put the roasted garlic in with the boiling water.
  • Mix veggies, couscous and a tub of feta.
  • Enjoy!
