I'm making these cookies and since it is our current favorite recipe I thought I'd share it with you!!
1 cup butter
1 cup brown sugar
3/4 cup white sugar
2 eggs
2 tsp vanilla
1 and 1/3 cups whole wheat flour
1 and 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 cups rolled oats
1 cup raisins (I cut them in half so you don't end up with soggy lumps in your cookies - time consuming but totally worth it!)
1/2 cup hemp hearts
1/2 cup oat bran
1/3 cup wheat germ
Cream butter, sugars, eggs and vanilla together until light and fluffy.
Stir in flour, soda, salt and cinnamon. Blend well.
Stir in rolled oats, hemp hearts, bran, wheat germ and raisins. Blend well.
Drop by teaspoonful onto parchment paper or silicone baking mat.
Bake at 375 F for 8-10 minutes until lightly browned. Remove from pan and cool.
Yields ~ 5 dozen cookies.
*I'm wondering if it works to substitute honey for some of the sugar and apple sauce for some of the butter... please let me know if you try it!
