"I cooked some black beans last night for a lunch burrito today...and made sure there was enough left over for this. I hadn't flavored the beans while cooking yesterday. 1 small yellow onion cut in half and then sliced
4 button mushrooms sliced thick
4 med leaves of kale
I sauteed the onions and then added the mushrooms.
After washing the kale I cut the stems out then roughly cut them into 2 inch pieces and added that to the pan.
Added 6 heaping tablespoons of the leftover black beans and then about 1 cup of boiling water to make a nice sauce.
Added some crushed red pepper just to give it a bit more flavor then ignored it while plating the rice.
Scooped some left over white rice onto some plates and heated it in the microwave.
I served the kale and black beans over the reheated rice and arranged it all neat to impress [my wife].
