Elbs asked for the recipe a while ago too, so I'm sending this to the whole family.
The recipe has changed over time, but here's how we currently make granola:
Combine in a large stainless steel bowl:
- 6 cups oats
- 6 cups other - 1 cup buckwheat, 1 cup sunflower seeds, 2 1/2 cups peanuts (I use half granulated, half whole), 1/2 cup ground flax, 1 cup chopped almonds
In a separate glass bowl, mix the wet ingredients:
- 1/4 cup water
- 1/2 cup coconut oil (or other oil of choice)
- 2/3 cup brown sugar
- 1-2 tsp salt (depending on whether the peanuts were salted)
- 2-3 tsp vanilla or almond extract
Microwave the wet ingredients enough to melt the coconut oil, if necessary. Pour over the dry ingredients and stir to coat.
Put stainless steel bowl into oven at 375 for an hour, stirring about every 10 minutes. When it feels done, turn the oven off. Add raisins and craisins as desired, and stir to combine. Let bowl of granola cool in the oven before transferring granola to storage container.
Serve with yogurt and fruit.
