During the first years of our married life, whenever we had supper guests I would make, these meatballs and serve them with steamed rice, vegetables and a salad.
Combine:
1 1/2 pounds ground beef
1 cup quick oatmeal
1 egg
1 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1/4 cup finely chopped onion
Mix together and form into small meatballs. Place on ungreased 9x13 pan. Bake at 350ºF for 30-35 minutes or until nicely browned and done. Pour off excess fat. Add a little water to pan, return to oven for a few minutes. Loosen meatballs by running a spatula under them. Put meatballs into a casserole dish.
To Make the sauce, heat together:
1 Tbsp. Soya sauce
1 cup water
1/2 cup brown sugar
1/2 cup vinegar
2/3 cup catsup
Pour sauce over meatballs, bake at 325ºF for 45 minutes or an hour. If sauce is too thin, thicken with cornstarch. Mix about a tsp. of cornstarch with a small amount of cold water, stir this into the hot sauce. Good served over rice.
