This is a bread Mom used to make quite often.  The recipe says it is for 9 - size 303 cans.  It can also be baked in a large loaf pan, or two small ones.

Combine:

3 beaten eggs
1/2 cup oil
1/2 cup milk

Stir together and add:

2 1/2 cups flour
1 cup white sugar
1 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. salt

Stir in:

2 cups shredded carrots
1/2 cup maraschino cherries
1 1/3 cups coconut
1/2 cup raisins
1/2 cup chopped nuts.

Bake at 350ºF.  Cans or small loaves: 45-50 minutes.  Large Loaf: 60-70 minutes or until done.
