After the CBC team followed Ryan and me on a dumpster run, I was contacted by another dumpster diver who wanted to ask a few questions and we ended up swapping some recipes. When you end up with a bumper crop of bananas, you need some creative ways to use them all because you can only eat so much banana bread! This recipe came from her.
1 can coconut milk
2 cups veg broth
3 large ripe bananas, sliced
3 thai peppers
1/2 onions
4 cloves garlic
salt and pepper
4 T soy sauce
3 T lime juice
1 stalk lemongrass, inner leaves
Bring coconut milk, broth, onions, garlic, peppers, and lemongrass to boil, then simmer about 20 minutes (10 if using a pressure cooker). The veggies are basically to season the broth, not for texture.
Strain out the veggies, but reserve the broth.
Add bananas, soy sauce, lime juice and salt and pepper to taste.
Cook 5 minutes, mashing up bananas or puree slightly.
