Salads, Dressings, Dips, and Sauces

This recipe used Hot Sweet Mustard, the recipe for that is also in this section.  This sauce is not hot when cooked on meat.  We use a little more onion powder that this recipe shows, but we like onion.

Combine and bring to a boil:

  • 2 Tbsp. dry onion
  • 2 Tbsp. lemon juice
  • 1 cup ketchup
  • 1/3 cup Worcestershire sauce
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 2 dashes tobasco sauce
  • 2 cups water
  • 1/2 cup flour

Pour over partially roasted and drained beef ribs.  Bake at 350ºF for 1 1/2 hours.

This dressing is very good for lettuce or potato salad.

Blend until smooth:

  • 1 cup low fat cottage cheese

Add and blend well:

  • 1 cup Weight Watchers mayonnaise

Stir in the following:

  • 2 Tbsp. dry parsley flakes
  • 2 Tbsp. dry onion
  • 2 tsp. dill weed
  • 2 tsp. seasoned salt

Use for dipping fresh vegetables.

Another one from Aunt Clasina.  Mom wrote "Combine all above ingredients. You will have the most delicious salad dressing you ever tasted."

Combine in blender jar, blend until smooth:

  • 1 1/2 cups white sugar
  • 1 1/2 cups salad oil
  • 1 cup catsup or 1 can tomato soup
  • 3/4 cup vinegar
  • 1 heaping tsp. French mustard
  • 1 onion, quartered

Makes one quart.  Store in fridge.

This is the recipe Mom used for potato salad.  As I sit here typing this recipe, I see a pan on a bread board on the kitchen windowsill, I can feel the gentle breeze, see the steam coming out of the pan, and recognize the somewhat pungent smell of the mustard dressing - the making of potato salad. Yum!

Mom sent this recipe that Aunt Clasina had given her.

Mix together and refrigerate:

  • 1 pkg. (8 oz.) cream cheese
  • 2/3 cup brown sugar
  • 1/3 cup sugar
  • 1 tsp. vanilla
  • 1/8 tsp. ginger

Dip apples and strawberries.

I got this recipe from a friend at college.  Whenever we would invite her over she would bring the ingredients for this snack salad.  She looked really timid, but we would often sneak pieces of the Snicker bar before they were added.  Once I caught her trying to fit half of one into her mouth.

I think Bev introduced us to this recipe.  It is a favorite to use for picnics and potlucks.

In 9x13 pan, layer the following:

  • 1 head lettuce (broken up)
  • 1/2 green pepper (slivered)
  • 1/2 cup chopped celery
  • 1/2 cup red onion (thinly sliced)
  • 10 oz. frozen peas (cooked and cooled)
  • 1 cup Weight Watchers Mayonnaise
  • 2 Tbsp. sugar
  • 1 cup grated cheddar cheese
  • 1/2 cup bacon bits (or 6-7 slices crisp bacon)

Refrigerate for 12-24 hours.

Chop and mix together:

  • 1/2 head cabbage (or part red cabbage)
  • grated carrots
  • 3-4 green onions

Prepare the dressing and pour over:

  • 3 Tbsp. sugar
  • 3 Tbsp. vinegar
  • 1/2 cup oil
  • 1/4 tsp. pepper
  • dash of salt
  • 1 pkg. Chicken Ramen Noodles seasoning

Just before serving crumble over top:

This salad is quite popular around here.  I like the taste a lot, but don't know how you can reduce the amount of Miracle Whip.  (It tastes great, but seems like a lot of dressing.)
