I think Bev introduced us to this recipe.  It is a favorite to use for picnics and potlucks.

 

Mix together and refrigerate:

 

  • 1 cup grated carrots
  • 1 cup diced celery
  • 2 sliced, hard boiled eggs
  • 1 can tuna or chicken
  • 1/2 tsp. finely chopped onion
  • 1 cup mayonnaise or salad dressing

 

Just before serving stir in:

 

  • 1 can (4 oz.) shoestring potatoes
