Buttermilk
Our favourite dessert this fall is the Upside-Down Pear Gingerbread recipe from the cookbook Simply in Season. You should probably make this. Soon. IT IS SO TASTY!
This is a delicious loaf; something like monkey bread but I like to slice it.
I tried it in an angel food cake pan with disastrous results. The sauce leaked out all over the oven. If you don't have a tube pan, you could use two bread pans.
We usually make a big recipe and then cool the leftovers (if there are any) on a rack and then warm them up in the toaster for a snack sometime.
6 cups flour
2 cups whole wheat flour
1 cup cornmeal
1 1/2 cups dry buttermilk
1/3 cup sugar
1 tsp. soda
4 tsp. salt
4 Tbsp. baking powder
Mix well, store in a tightly covered container. To use:
3 cups mix
3 eggs
1 1/2 Tbsp. oil
water to desired consistency
Mom worked for Olson's for a while. Mom always appreciated how Mrs. Olson always looked forward to a cup of coffee with her in mid morning.
I made this with some of the meals at college, and then as a side for our Christmas dinner as well.
