The batter is just as good as the muffins!

In large bowl, blend together:

  • 2 cups flour
  • 2 cups bran
  • 1 cup brown sugar
  • 2 tsp. soda
  • 2 tsp. baking powder

In separate bowl, beat together:

  • 2 eggs
  • 4 Tbsp. oil
  • 2 cups buttermilk (or milk and vinegar)

Add the wet to the dry.  You can add:

raisins, dates, apple bits

Bake at 375ºF for 15-20 minutes.
