Cottage Cheese

Blend until smooth:

  • 1 cup low fat cottage cheese

Add and blend well:

  • 1 cup Weight Watchers mayonnaise

Stir in the following:

  • 2 Tbsp. dry parsley flakes
  • 2 Tbsp. dry onion
  • 2 tsp. dill weed
  • 2 tsp. seasoned salt

Use for dipping fresh vegetables.

Here is another really tasty recipe.  It called for zucchini but since our spaghetti squash is the most abundant this fall, I used it.  Dad and I both rank this to be a keeper recipe. I halved the recipe for an 8 inch glass pan, baking it at 325 for about 45 minutes as we went to Bird's Hill for a walk/jog. This is the halved amounts.

Cook as package directs:

1 lb. lasagna noodles

Combine the following:

24 oz. cottage cheese
1/2 cup grated parmesan cheese
3 eggs (beaten)
2 tsp. salt
1/2 tsp. pepper

In frying pan, brown together and add:

2 lb. hamburger
1 Tbsp. dried minced onion
1/2 tsp. dried minced garlic
1 can tomato paste (added after meat is brown)
2 cups canned tomatoes
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
