These muffins have been made often by our family. The recipe is from the early 1970's when I was new here and we made a Calvinette cookbook. We like them, and over the years we have come up with some variations.
Base
3 cups flour
4 tsp. baking powder
1 tsp. salt
2/3 cup sugar
2 eggs
1 cup milk
1/2 cup oil
Mix wet, then mix dry, then combine, stirring only until moistened. Bake at 325 for 20-25 minutes.
Surprise Muffins
Fill tins half full and then add a filling and cover with more batter. Top with a sprinkle of sugar.
cinnamon and sugar mixture
apple jelly
frozen blueberries
Chocolate Chip Muffins
Add to batter:
2/3 cup chocolate chips
Honey Wheat Muffins
Replace 1 cup of regular flour with:
1 cup whole wheat flour
Replace sugar with:
honey (added to the wet ingredients)
