This is Janel's specialty lasagna which is always a hit and has the distinct advantage of not having to prepare the noodles before putting the lasagna together -- they cook in the oven with the rest of it. This is Alleia's staple meal and we usually divide the lasagna up into baby food jars to stock in the freezer for a quick meal we know she'll devour.
Have ready:
Lasagna noodles
Ricotta cheese (1 container)
Frozen spinach
1 egg
a little milk
spices as desired
3 cups shredded mozarella
2 jars of your favorite pasta sauce
Prepare in a 9x12 pan as follows:
- 1 layer of noodles (I do three across and half of one on the top side)
- 1 layer of ricotta, frozen spinach, 1 egg, a little milk, spices, and 3 cups moz. cheese combined
- 1 layer of 2/3 jar of pasta sauce
- Repeat the above steps three times total
Add one cup of water along the edges of the pan.
Bake at 375 for an hour
After the hour is up, add some cheese on top and bake again for 5 minutes
