We had this at a friend's house and asked for the recipe. Danica says "Sorry for this extremely imprecise recipe. Let me know if you make it so I can perfect the recipe."
Stovetop recipe:
1 large onion
3-4 cloves garlic
Sweat the onions/garlic in a soup pot.
When onions are soft ADD and brown
1 lb loose sausage (we like to use spicy italian loose sausage)
When all the sausage is browned pour off any grease and ADD
4-6 cups chicken stock
Bring to a boil and ADD
2 cans navy or cannellini bean
a large bunch of kale chopped up and stems removed
Simmer until the kale is soft
Crockpot recipe:
Add to crockpot:
1 lb dry white beans
4 cups water
some fresh herbs
Cook on low for 3 or so hours or until the beans are pretty soft but not totally done.
Meanwhile brown the sausage.
Then add to pot:
1 large onion
3-4 cloves minced garlic,
browned sausage
1 bunch of kale chopped up and stems removed
4 C chicken stock
Cook for 2 -4 more hours or so on low or until everything is done :-) Or you can keep the kale out until the last hour of cooking so it doesn't get overcooked.
