Mom’s Overnight Yeast Buns

On the farm it was 8 loaves made 3 times a week plus a pan of buns.  Later, as the family grew smaller in town, 2 pans a week was the norm.

At 5-6 PM, mix:

1 1/2 Tbsp. lard
3/4 cup sugar
2 tsp. salt
2 1/2 cups boiling water

Soak in a bowl of warm water:

yeast cake

Add to cooled mixture, adding enough flour to make a dough.  Knead down between 7 or 8 PM.  Put buns in bans about 10 PM and cover with a towel.  Let stand in a cold place overnight.  Bake in the morning for 30 minutes.  Makes 35 buns.
