Auntie Gena gave me this recipe after we had it for lunch during a visit to Glenmount in 1999. Then Edward and I made it for Mom's birthday a few years ago when we were in Winnipeg before our wedding. Everybody there liked it, even though some weren't so sure when they saw so many mushrooms go into it. I'm typing the halved recipe (it will make one pie).
Have ready:
one unbaked pie shell
Saute in large skillet:
2 Tbsp butter
1 1/2 cups chopped onions
Add and stir:
4 cups of sliced mushrooms
1/2 tsp dried thyme
1/4 tsp salt
fresh black pepper
Chunk and add:
4oz light cream cheese (I think this is 1/2 cup)
Put in unbaked pie shell.
Top with:
1/2 cup bread crumbs
1 1/2 tsp oregano
2 Tbsp parmesan cheese
Bake 30 minutes at 400 F.
