We've merged Grandma's recipe and Matt's recipe and modified slightly.
Stir together:
- 2 cups coarse oatmeal flour (spin rolled oats through the food processor)
- 2 cups unbleached flour
- 1/2 cup corn meal
- 1/2 cup ground flax seed
- 4 tsp baking soda
- 1 tsp salt
Mix together and then add to dry:
- 4 egg
- 3 3/4 cup of milk
- 1/4 cup vinegar
- 1/2 cup oil
If you have sour milk you can substitute 4 cups sour milk for the milk and vinegar. Bake as usual for pancakes.
