This soup has a peanut sauce undertone which is quite good.
Ingredients:
- 2 Tbsp oil
- 2 large onions, diced.
- 2 red bell peppers, seeded and diced.
- 4 carrots, peeled and diced.
- 1-2 tsp cayenne pepper
- 1 tsp freshly ground black pepper
- 2 cloves garlic, minced.
- 2-3 tsp fresh ginger, peeled and grated.
- 2 large sweet potatoes, peeled and cubed.
- 10 cups of veggie or chicken broth
- 2 cans diced tomatoes, with juices.
- 1-1.5 cups peanut butter
- 4 tsp honey
- 1 cup chopped scallion greens
Instructions:
Heat oil in a soup pot over medium-high heat, and saute/soften onions, bell peppers, and carrots for about 5 minutes. Mix cayenne, black pepper, garlic and ginger and add to soup pot, stirring throughout. After about 1 minute, stir in sweet potatoes. Add broth and tomatoes and bring to a boil. Reduce heat and simmer until sweet potatoes are soft (approx. 20-25 min).
Use an immersion blender to puree, leaving it in the soup pot. Add peanut butter and honey, stirring well until peanut butter is melted and mixed in. Serve with scallions on top.
