We made these with fresh pumpkin puree and went a little overboard on the chocolate chips (scaled down in the recipe here).
- 4 eggs
- 2 cups sugar
- pumpkin puree from a medium pumpkin
- 3/4 cup canola oil
- 3/4 cup applesauce
- 2 1/4 cups unbleached flour
- 1 1/2 cups coarse oatmeal flour (spin rolled oats through the food processor)
- 1/4 cup ground flax seed
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
- 1 1/2 cups chocolate chips
Instructions

Beat together eggs, sugar, pumpkin, oil and applesauce.

Separately, combine together flour, flax seed, baking soda, baking powder, cinnamon and salt.

Slowly add to the first mixture, beat only until mixed.

Fold in 1 cup of chocolate chips.

Fill greased or paper-lined muffin tins 3/4 full

Sprinkle remaining 1/2 cup of chocolate chips on top before baking and push down slightly

Bake at 400°F for 18 - 20 minutes
