If you are part of a CSA sometimes you get things you might not usually use, like radishes. Here's a soup that uses the tops of the radishes.
Ingredients:
- 2 Tbsp olive oil
- 1 large onion, diced
- 2 medium potatoes, sliced
- 4 cups raw radish greens/tops
- 4 cups water or soup stock
- 1 can of white beans (optional, to make the soup creamier)
- Salt and pepper to taste
- 1 radish, sliced
Directions:
Melt oil in a large saucepan (medium heat). Saute onion until tender. Mix in potatoes and radish greens, coating with oil. Pour in stock and bring to a boil. Reduce heat, add beans (if desired), and simmer 30 min. Allow to cool slightly and transfer to blender to blend until smooth. Return to the saucepan and add salt/pepper to taste. Cook and stir until well blended, then serve with radish slices.
