This recipe is hand-written in my book. I got it from mom, who says she got it from "the Super Store's bargain banana bag".
Preheat oven to 350.
Cream together:
1/2 cup margarine, room temp.
3/4 cup sugar
Beat until light and fluffy
Add one at a time, beating well after each addition:
2 eggs
Stir together and add:
1 cup unbleached all purpose flour
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
Mix well.
Fold in:
3 large ripe bananas, mashed
1 tsp vanilla
1/2 cup chopped walnuts, optional
Bake in greased loaf pan 50-60 minutes or until tester comes out clean. Cool in pan 10 minutes, then on rack.
