Wok Vegetables

Arlo has enjoyed some cooking experience in Home Ec. at school.  He made this for us for supper once.

Clean and chop the following vegetables:

1 cup broccoli flowerets
1 large carrot, sliced diagonally
1 med. onion, sliced

Clean and chop the following, but keep separate:

1 cup sliced celery
1/2 green pepper, cut in small strips
1/2 cup bean sprouts

Have ready:

1 cup chicken stock
1/4 tsp. salt
1/4 tsp. ginger
1/4 tsp. garlic powder
pea pods (if available)
1 Tbsp. cornstarch
1 -  2 Tbsp. Soya sauce

Heat in wok:

2 Tbsp. oil

Stir fry broccoli, carrot, and onion for 2 - 4 minutes.  Add the chicken stock, cover, and simmer 2 minutes.  Add celery, green pepper, and bean sprouts.  Season with salt, ginger, and garlic powder.  Stir fry 2 minutes.  Add pea pods if available.  Dissolve the cornstarch in the Soya sauce and pour over vegetables.  Stir until sauce thickens.  Serve immediately.  It is good over rice.  Cubed, cooked chicken can be added as well.  Yield:  4 - 6 servings.
