We bought a huge bag of apples from an orchard so we were looking for apple recipes. This was a request from Janel so I found a recipe online and modified it slightly based on quantities we had on hand.
2 Tbsp butter
1 Tbsp olive oil
4 small yellow onions
2 Tbsp curry powder
1 butternut squash
3 large sweet apples
salt and pepper to taste
2 cups water
1 1/2 cups apple juice
Heat butter and oil in skillet and add chopped onions (I chopped the onions with a few quick passes in the food processor). Add the curry powder and leave over low heat as you continue, mixing once in a while and scraping the bottom of the pan.
Put two cups of water on to boil in a saucepan. Meanwhile, cut the top and bottom off the butternut squash and use a peeler to get the outer layer of peel off. Cut it in half and scoop out the seeds with a spoon. Peel, quarter and core the apples. Cut the squash and apples into chunks and add to the boiling water. Cook until the squash and apples soften, then scoop into the food processor along with the onion mixture and puree to desired consistency. Return to saucepan and add apple juice and salt and pepper.
Serve hot.
The squash, apples, and mixture can be simmered in a crockpot as well and then pureed shortly before your meal.
