I've been making it into 24 buns most of the time, but it is a recipe for 2 loaves of bread.

Combine, stirring together:

2 1/2 cups warm water (110 degrees F is ideal)
1/2 cup powdered milk, opt.
1/3 cup oil or butter
1/3 cup honey
1 1/2 tsp. salt

Combine in large bowl:

1 cup oatmeal
1 cup wheat bran
1/4 cup each ground flax and sesame seeds

Stir water mixture into oat/bran mixture.

Add:

2 eggs, beaten with a fork

Stir, then add:

1 Tbsp instant yeast

Stir, then add:

about 5 cups of flour (2 whole wheat & about 3 white)

Stir in enough flour to make it hang together, then dump on to floured surface and knead, adding flour as needed. It doesn't always take all the flour so don't add it all at once. Knead until it is nice and soft. Place in a greased bowl, dumping it in top first and then turning so the top is greased.

Cover and let rise for 1 - 1 1/2 hours.

Form into 24 buns, placing them on greased pans. (2 cookie sheets or 3 9x13 pans). Or, make a dozen buns and a loaf of bread, or two loaves of bread.

Cover and let rise again for about 45-60 minutes. Bake buns at 350 degrees for 20 minutes, bread for 30-35 minutes.
