I got this recipe from a lady who is from India. It has all of the curry called for, which might be a little strong for some.
Sauté:
- 1/4 cup butter or margarine
- 2 medium onions (chopped)
- 2 Tbsp. curry powder
- 1 medium apple (peeled and diced)
When onion is soft, mix in:
- 1/4 cup flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 6 cups chicken stock (or water and bouillon)
Bring to boil, stirring. Soup will thicken. Add:
- 2 cups cubed cooked chicken
- 2 medium carrots (diced)
- 1 celery stalk (diced)
- 1/2 cup light cream
Simmer, covered, until vegetables are tender. Makes about 7 cups. You can make rice and put some in each bowl before filling.
