Our favourite [pumpkin recipe] this week is a pumpkin dip that tastes great with apple slices.
- 1 cup of pumpkin puree,
- a combo of cream cheese and yogurt/dairy kefir (about a cup),
- about 1/2 cup of brown sugar (more to taste - the recipe calls for 1 cup, or use some honey),
- a splash of maple syrup (plus some maple extract if you have it),
- a tsp of cinnamon (and/or other pumpkin spices you like).
Let it soften, then whip it all together, then chill. (tastes great with apple slices)
