We had this at a Ladies Rally in Emo, Ontario in June, 1981. It is a fun meal to serve, good to serve after you've just done a major grocery shopping since there are quite a few ingredients.
I don't know how many this serves, but would guess at least a dozen. When this is served the ingredients are served in order. Begin with the rice, then the chicken and gravy, followed by the remaining ingredients in the order given.
Cook stewing chicken until tender, dice meat.(Or stir fry boned, diced chicken until tender)
8 cups cooked chicken (approx.)
Make gravy from chicken broth or bouillon.
4 cups gravy (approx.)
Combine meat and gravy, keep hot. At the same time cook:
3 cups long grain rice
Using the usual method. Keep hot. Get the following ready in separate bowls (not all ingredients are needed):
4 large tomatoes, chopped
3/4 cup chopped onion
1 8 oz. bag chow mien noodles
1 cup chopped celery
1 cup chopped green peppers
1 pound shredded medium cheddar cheese
1 can crushed pineapple (20 oz.)
1 1/2 cups toasted almonds.
1 package coconut (8 oz.)
Serve with rolls or buns.
