For Christmas 1994 Jonathan gave Elbert a gift he really enjoyed.  It was a bag of potting soil, 12 pots, and a note telling him that each month he would receive some seeds.  As a bonus, he got some for that month as well.  They were for “hot peppers”.  Those hot peppers were his most treasured plants.  They were started in the house, then transplanted and kept on the deck for the summer.  Elbert watched them closely, then harvested the 14 peppers that were produced.  In the late fall, he and Gwen chopped them up for a triple recipe of this salsa.

Our neighbor lady on Riverton made this a lot in the fall.  It smelled so good as the smell wafted over (through) the chain link fence on those cool late summer evenings..

We really enjoy this lemon spread for our toast or bread.  It is a good way to use some zucchini when there is an abundance.  I also peel, slice, and measure the zucchini and freeze it.  Then in the winter when lemons are a good price and I have some extra time, I can make a batch.

There are a lot of crab apple trees around Winnipeg.  We can usually get a good supply of apples for the picking.  Some varieties (esp. the Rescue crab) are good for apple sauce and jelly.

This is a good icing for cake decorating.

This was a favourite on chocolate cake when I was a child.

This is a delicious loaf; something like monkey bread but I like to slice it.

I tried it in an angel food cake pan with disastrous results.  The sauce leaked out all over the oven.  If you don't have a tube pan, you could use two bread pans.

During the first years of our married life, whenever we had supper guests I would make, these meatballs and serve them with steamed rice, vegetables and a salad.

We had this at a Ladies Rally in Emo, Ontario in June, 1981.  It is a fun meal to serve, good to serve after you've just done a major grocery shopping since there are quite a few ingredients.
I don't know how many this serves, but would guess at least a dozen. When this is served the ingredients are served in order.  Begin with the rice, then the chicken and gravy, followed by the remaining ingredients in the order given.

Pizza

This is the recipe we use for our pizza crust every Saturday night.  Dawn made it at Dordt once and when she had the pizza in the oven, opened the microwave and found the margarine.  The pizza tasted fine, so now we just leave out the margarine.

A Ukrainian dish usually served either boiled or fried with onions and topped with sour cream.  I don't know what a true Ukrainian would say about our method.  Elbert really likes these.

I bought Bisquick to try this one and we like it.  When measuring the cheese, I loosely pack it into the measuring cup.

We like this as a side to the boxes of macaroni and cheese.  It is also good over rice.  Leftovers of rice, ground beef, and vegies added to Campbell’s Tomato Soup is one of Jonathan’s favourite soups.

Mix together:

1 1/2 lb. ground beef
1 cup quick oatmeal
1 egg
1/2 pkg. dry onion soup mix
1/2 tsp. nutmeg
1/4 tsp. black pepper

Form into small meatballs and place on an ungreased cookie sheet.  Bake at 325ºF for 30-45 minutes or until nicely browned.  Pour off excess fat.  Pour a little water on the cookie sheet and return to oven briefly. 

Gravy:

Combine and simmer for 5 minutes:

2 cups boiling water
1/2 pkg. dry onion soup mix

Mix together, then add to hot soup mix:

This was a handout from a store taste test.  It was a chilly and damp day.  Yum!
