I developed this recipe while I was interning at the Land Institute (summer 2002). I really like the heartier feeling that comes with the cornmeal. I would often walk a mile each way to the mulberry tree to pick fresh berries to mix in with the batter, and that may be part of the reason they always tasted so good.

We made this as a part of the Seattle Bakker's Christmas package this year, and did eat a few ourselves as well.

Spiced Apple Pear Crumble Pie

This is a recipe I made up based on a variety of online sources and the contents of our fridge. I think it turned out fairly well.

Ingredients
6 onions
8 cups beef stock
white wine
by leaf
1/4 tsp dry thyme
1/4 tsp sugar
2 cloves minced garlic
french bread (sliced and toasted)
1.5 cups grated Swiss gruyere cheese

 

Easy to prepare in the slow cooker and since it takes 9-10 hours to cook on low, its a great recipe for when you will be away from home all day.

An easy way to make a tasty pork roast.

Mushroom Pork Loin

This recipe actually originated in a grocery store. They were giving out samples and it tasted so good that I took the recipe sheet home with me and later tried it out. Suggested pairing: Bruschetta Fresca. Yum.

This recipe was stolen from a friend's Facebook status: "Just made the yummiest cup of coffee I have ever had by cold brewing coarse grind Tim Hortons in my french press. Extract goes in the fridge and my coffee is made for the week."

Julie and I have made this several times, adapting whatever other recipes or ingredients we have on hand.

Paneer

This is tasty added to a vegetable curry.  This recipe came from a cooking class Erica took at our local co-op, taught by Rupa Dash.

Peanut Butter Banana Chocolate Chip Muffins

This is a recipe from our local health food store's monthly magazine. Banana chocolate chip muffins are already delicious--adding peanut butter makes them even more so :-)

Bargain Banana Bread

This recipe is hand-written in my book. I got it from mom, who says she got it from "the Super Store's bargain banana bag".

This recipe used Hot Sweet Mustard, the recipe for that is also in this section.  This sauce is not hot when cooked on meat.  We use a little more onion powder that this recipe shows, but we like onion.

We got this one from a friend after we had it at their house. It was helpful to use some of the kale from our CSA that year.

Janel's Lasagna

This is Janel's specialty lasagna which is always a hit and has the distinct advantage of not having to prepare the noodles before putting the lasagna together -- they cook in the oven with the rest of it. This is Alleia's staple meal and we usually divide the lasagna up into baby food jars to stock in the freezer for a quick meal we know she'll devour.
